We've never been so intrigued by a dish until we saw this black gyukatsu in social media. The color contrast between the black breading and juicy red meat looked not only appetizing, but also elegant. Just by looking at the ingredients, we knew this wouldn't be your everyday lunch meal; the high price point is justified by high quality ingredients.
The meat is relatively juicy, but the signature katsu crunch layer didn't have enough bite on it for us. They gave us a cast iron pan to sear the meat before actually eating them, and that actually helped accentuate the meat's natural aroma. We loved the three grill sauces as well (onion sauce, truffle sauce, bulldog sauce), with the onion sauce being our favorite for its savoriness. After grilling the meat, we dipped it in the egg yolk before savoring every bite. In our opinion, the meat could use more salt, though. 🙏🏻
The foiegras rice is... a foiegras rice. You can taste the foiegras with every mouthful of the rice, and it adds complexity to the flavor even more. The truffle soup is mostly a dashi stock with some sliced shimeji mushroom and a generous drizzle of truffle oil. We were impressed with the amount of variation we got with a single set menu, which in part is the selling point of this dish.
However, we felt that there was too much going on in one dish, that we failed to determine which is the "star" ingredient of the set menu. Each component tasted great on their own, but we're not entirely sure if they're meant to be eaten together. 🙏🏻🙏🏻🙏🏻
