Salmon Aburi Sushi. I used to like it raw, but a little torch just doubling the flavor. Before the chef blow torch the salmon, he brushed it with some kind of sauce. Is it kaeshi? Not sure. Here's the thing, he put the salmon on top of the rice before torch it, so the oil went down and the rice absorbed it all. It made huge impact. Fresh, fatty, thick, smoky, all in one bite. You need no shoyu to eat this but a little dip and adding a pinch of wasabi will make it even better. For me, Nama Sushi is one of the best place to eat sushi. Great quality sushi at reasonable price.
